Ingredients
Chicken: 3–4 pounds of boneless
skinless chicken breasts
BBQ Sauce: 3 cups of reduced-sugar BBQ sauce
Quinoa: 3 cups dry quinoa
makes about 6 cups cooked
Water for quinoa: 6 cups
Black Beans: 3 cans
15 oz each
Shredded Purple Cabbage: 6 cups
Corn Kernels: 3 cups
Red Onion: 3/4 cup chopped
Roma Tomatoes: 6 diced
Jalapeño: 3 sliced
Avocado: 3 sliced or diced
Fresh Cilantro or Scallions: For topping
Greek Yogurt Ranch or Ranch Alternative: 3 cups
Instructions
Grill Chicken: Season and
grill chicken for 6–7 minutes per side until cooked (165°F). Rest for 5 minutes, then slice.
Cook Quinoa: Boil 6 cups of water, add 3 cups of quinoa. Simmer for 15–20 minutes, fluff with a fork.
Prep Veggies: Dice tomatoes, chop onion, slice jalapeños, and avocado. Rinse beans, shred cabbage.
Assemble Bowls: Layer quinoa, chicken, veggies, black beans, corn, and avocado in bowls. Drizzle with ranch and top with cilantro.
Serve: Enjoy immediately or store for later.
